Punky’s in Canggu (Best Tacos in Bali)

Punky’s taco joint offers the best tacos in Canggu Bali. They’re on the Berawa side of Canggu near the fun and dreaded short-cut. There are other delicious Mexican food offerings here that are equally popular to their tacos such as burritos, quesadillas and even Mexican rice bowls, Owned and operated by Canadian-born Matt and his Indonesian girlfriend Madu - the unique flavour profiles of their fillings, their delicious mild to spicy and sweet and sour house made salsas and moderately priced tacos might be what draws you here but the story I love is about the often underrated tortillas that envelopes all this deliciousness like a carefully crafted favourite sweater.


If you’re a taco aficionado, you pay attention to how one crafts the tortilla. Corn is native to Bali but most restaurants offering tacos on their menu will serve tacos on flour tortillas.

Why? The corn variety grown in Bali has a low starch content making it difficult for a corn tortilla to bind together. Like some of the best creations in life - the lack of an effortlessly made corn tortilla using local corn didn’t stop their strive for perfection. They spent 6 months trying to fix this binding issue and have even started growing their own corn in the mountains here in Bali. They have overcome their hurdles and achieved success in creating the perfect made in Bali corn tortilla. They have even started making a black rice tortilla using the local black “forbidden rice” which offers another gluten-free alternative and delicious mild nutty flavour with a nice chew to its texture alone. If all this effort is going into the tortilla itself - what on earth are they filling them with you might be wondering?


Well for starters they have a Bali Spiced Chicken, fried chicken with dill and fermented green chili, a delicious vegetarian with almonds and dill that would please the fussiest of carnivores, chorizo, breakfast taco, a ground beef taco and my personal favourite a slow-braised pork loin taco. Let me tell you why the latter is my favourite - the pork comes from a small local sustainable and organic farmer called Highlands - they raise the “Happiest Pigs in Bali” that’s actually their slogan. These are the Black Bali Pigs which are a heritage pig. This pork melts in your mouth and is combined with a nice crisp apple which gives malic acid (all these years studying wine is handy when eating tacos) to the flavour profile cutting through the fat and providing and nice contrast in textures. This pork taco is remarkably memorable to any pork lover.


Punky’s doesn’t stop there. They pour their hearts into their 3 salsa offerings. 2 of them made from fermented chilis - one from the long green child which is a milder child, the other is from the Java Ghost Pepper which is spicy as fuck but I love that. Then they have a red salsa which is a mosh pit of ingredients that gives you the sweet, sour and spicy combination.
